Course One ~ The Appetizer
Cucumber Rolls & Creamy Avocado Spread – (Want a more seasonal flare, substitute raw zucchini for the cucumber!)
Sweet Potato Kale Bites – (Substitute milk for almond or cashew milk)
Course Two ~ Soup + Salad
Course Three ~ The Main Course
Make this recipe 100% vegan with the following substitutions:
1 cup butter = 1 cup ghee
2 large eggs = 2 flax eggs (2 tablespoons flax seed + 6 tablespoons water)
1 cup parmesan cheese = 1/3 cup nutritional yeast
Or try a main course off the beaten path… a pizza Thanksgiving!
Or simply steam your favorite fall veggies and drizzle with pure extra virgin olive oil and a sprinkle of salt and pepper.
